Eggless Oatmeal Chocolate Chip Cookies

Yield : 1 dozen

Ingredients:
  1. Quick cooking oats - 1 cup
  2. All purpose flour - 1/2 cup
  3. Brown sugar - 1/2 cup
  4. Granulated sugar - 1/4 cup
  5. Butter - 1 tbsp
  6. Vegetable oil - 2 tbsp
  7. Baking powder - 1/4 tsp
  8. Baking soda - 1/2 tsp
  9. Vanilla essence - 1 tsp
  10. Hot water - 3 tbsp
  11. Semisweet chocolate chips - 1/4 cup
  12. Salt - 1/4 tsp
Preparation:


  • Preheat oven to 375 F.
  • Grind oats into a fine powder .Sieve this powdered oats along with all purpose flour, baking powder, baking soda and salt; set aside.
  • In a mixing bowl, mix together butter, brown sugar, granulated sugar and vegetable oil.Add vanilla essence and mix well.
  • To this, add in the sieved mixture along with hot water and mix to form a dough .Stir in chocolate chips.
  • Drop dough by rounded tablespoonfuls about 2 inches apart onto a cookie sheet and bake for 12 - 13 minutes or until golden brown.
  • Transfer to a rack and let it cool for 30 minutes
