Eggless Oatmeal Chocolate Chip Cookies
- Quick cooking oats - 1 cup
- All purpose flour - 1/2 cup
- Brown sugar - 1/2 cup
- Granulated sugar - 1/4 cup
- Butter - 1 tbsp
- Vegetable oil - 2 tbsp
- Baking powder - 1/4 tsp
- Baking soda - 1/2 tsp
- Vanilla essence - 1 tsp
- Hot water - 3 tbsp
- Semisweet chocolate chips - 1/4 cup
- Salt - 1/4 tsp
Preparation:
- Preheat oven to 375 F.
- Grind oats into a fine powder .Sieve this powdered oats along with all purpose flour, baking powder, baking soda and salt; set aside.
- In a mixing bowl, mix together butter, brown sugar, granulated sugar and vegetable oil.Add vanilla essence and mix well.
- To this, add in the sieved mixture along with hot water and mix to form a dough .Stir in chocolate chips.
- Drop dough by rounded tablespoonfuls about 2 inches apart onto a cookie sheet and bake for 12 - 13 minutes or until golden brown.
- Transfer to a rack and let it cool for 30 minutes
