Chicken Biriyani Kerala Style

Ingredients:

For rice:

  1. Basmati rice - 2 cups
  2. Cardamom- 3
  3. Cloves - 3
  4. Cinnamon stick - 1 inch piece
  5. Bay leaves - 2
  6. Star anise - 2 
  7. Fennel seeds - 1 tsp
  8. Salt - 1 tsp
  9. Ghee - 1 tsp
  10. Water - as needed
For marination:
  1. Chicken - 1/2 kg
  2. Chilli powder - 1 tsp
  3. Turmeric powder - 1/4 tsp
  4. Pepper powder - 1/2 tsp
  5. Salt - as needed
For chicken masala :
  1. Onion - 2 , sliced
  2. Tomato - 2, chopped
  3. Ginger - 1 inch piece
  4. Garlic - 10 cloves
  5. Green chilli - 3
  6. Cardamom - 2
  7. Cloves - 3
  8. Fennel seeds - 1/2 tsp
  9. Red chilli powder - 1.5 tsp
  10. Coriander powder - 1 tbsp
  11. Turmeric powder - 1/2 tsp
  12. Garam masala - 1 tsp
  13. Oil/Ghee - as needed
  14. Salt - as needed
  15. Coriander leaves/cilantro - 1/4 cup
For garnishing:

  1. Raisins - 1/4 cup
  2. Cashews - 2 tbsp
  3. Coriander leaves - 1/4 cup
  4. Ghee - 1 tbsp
Preparation:

Rice:

  • Wash well and soak basmati rice in enough water for 30 minutes.Drain water and set aside.
  • In a vessel, boil water and add all the whole spices.
  • Add in ghee and salt along with  soaked rice.
  • Cook rice to the correct consistency .Drain excess water and spread rice on a tray and let it cool.
Chicken masala:
  • Marinate the chicken pieces with the listed ingredients and set aside for 2 hours.
  • Grind ginger , garlic and green chillies together.
  • Heat oil/ghee in a pan .Add all the whole spices and fry for few seconds .
  • Add in ginger garlic chilli paste along with sliced onion and saute till the raw smell is gone and  onion turns translucent.
  • Add all the spice powders listed and fry for few seconds.
  • Next, add chopped tomatoes and cook for 4-5 minutes.
  • Finally, add in the marinated chicken pieces along with coriander leaves .Add  a little water if needed.Mix everything well and close the lid.
  • Cook in medium flame till the chicken is done.The gravy should be thick.
  • Switch off the flame.
Layering:
  • Fry raisins and cashews in ghee and set aside.
  • Preheat oven to 350 F.Take a baking dish and brush it with some ghee/ oil.
  • Spread a layer of rice in the bottom and on top of it, add the chicken masala.
  • Add raisins and cashews along with chopped coriander leaves and few drops of ghee.
  • Repeat the process till rice and chicken is finished.The topmost layer should be rice topped with garnishing items.
  • Seal  the dish with aluminium foil and bake for 20-25 minutes.
  • Serve with raita, salad, pickle etc..
