Chicken Fried Rice

Ingredients:

  1. Long grain rice - 2 cups
  2. Boneless chicken - 1/4 kg
  3. Onion - 1, chopped
  4. Chopped garlic - 2 tsp
  5. Capsicum - 1, cubed
  6. Chopped celery stalks - 1/4 cup
  7. Soy sauce - 2  tbsp
  8. Chilli sauce - 2 tsp
  9. White vinegar - 2 tsp
  10. Pepper powder - 1/2 tsp
  11. Chopped spring onion - 2 tbsp
  12. Salt - as needed
  13. Vegetable oil - 2 tbsp
Preparation:

  • Wash well and soak rice in enough water for 30 minutes.
  • Cook it to perfect consistency and drain excess water.
  • Spread rice in a tray and let it cool.
  • Cut chicken into small pieces and set aside.
  • Heat oil in a pan and add chopped garlic .Fry till the raw smell is gone.
  • Add in chopped onion , enough salt and saute till it turns translucent.
  • Next, add chicken pieces and cook it for 5-6 minutes.
  • When the chicken gets cooked, add soy sauce, chilli sauce , white vinegar and mix everything well.
  • To this, add chopped capsicum and celery; stir fry for 2-3 minutes.Add cooked rice and mix well.
  • Finally, add chopped spring onion and sprinkle pepper powder.
  • Switch off the flame and serve hot.
