Chicken Fried Rice
Ingredients:
- Long grain rice - 2 cups
- Boneless chicken - 1/4 kg
- Onion - 1, chopped
- Chopped garlic - 2 tsp
- Capsicum - 1, cubed
- Chopped celery stalks - 1/4 cup
- Soy sauce - 2 tbsp
- Chilli sauce - 2 tsp
- White vinegar - 2 tsp
- Pepper powder - 1/2 tsp
- Chopped spring onion - 2 tbsp
- Salt - as needed
- Vegetable oil - 2 tbsp
- Wash well and soak rice in enough water for 30 minutes.
- Cook it to perfect consistency and drain excess water.
- Spread rice in a tray and let it cool.
- Cut chicken into small pieces and set aside.
- Heat oil in a pan and add chopped garlic .Fry till the raw smell is gone.
- Add in chopped onion , enough salt and saute till it turns translucent.
- Next, add chicken pieces and cook it for 5-6 minutes.
- When the chicken gets cooked, add soy sauce, chilli sauce , white vinegar and mix everything well.
- To this, add chopped capsicum and celery; stir fry for 2-3 minutes.Add cooked rice and mix well.
- Finally, add chopped spring onion and sprinkle pepper powder.
- Switch off the flame and serve hot.
