A mouth watering menu of your favourite flavours


Ingredients:

  1. Sweetened shredded coconut - 2 cups
  2. Sweetened condensed milk -1/2 cup
  3. All purpose flour/Maida - 2 tbsp
  4. Vanilla essence - 1/2 tsp
  5. Cherries - for topping
  6. Salt - a pinch




reparation:
  • Preheat oven to 350 F.
  • In a large bowl, add in shredded coconut, flour and salt.Mix everything well.
  • To this mixture, stir in condensed milk and  vanilla essence to form a slightly sticky dough.
  • Make small balls out of the dough and press them gently .Top each balls with a sliced cherry .
  • Place them on a lined baking tray and bake for 15 minutes.
  • Take out of the oven after 15 minutes and let them cool completely.



Ingredients:

  1. All purpose flour - 1 cup
  2. Butter - 1/4 cup
  3. Egg - 1
  4. Sugar - 1/2 cup
  5. Orange zest - 1 tsp
  6. Orange juice - 1 tbsp
  7. Vanilla essence - 1/2 tsp
  8. Baking powder - 1/2 tsp
  9. Salt - 1/4 tsp
  10. Powdered sugar - 1/4 cup
Preparation:
  • Preheat oven to 375 F.
  • Sieve together all purpose flour, baking powder and salt.Set it aside.
  • In a mixing bowl, add in butter and sugar.Beat them together until fluffy.Add  egg and beat again for few minutes.
  • To this mixture add orange zest, orange juice, vanilla essence and mix well.
  • Next, add the sieved flour mixture and mix gently to form a sticky dough.Cover it and refrigerate for an hour.
  • To make cookies, make small balls out of the dough and roll them in powdered sugar.Transfer to a lined baking tray and bake for 15 minutes.
  • Remove cookies from the oven and let them cool completely.Store in an airtight container.

Ingredients:


  1. Heavy cream - 1 cup
  2. Condensed milk - 1 can
  3. Fresh  strawberry - 2 cups
  4. Vanilla essence - 1 tsp
Preparation:

  • Wash well and chop the strawberries into small pieces.Take half of them and set aside.
  • Puree the remaining half strawberries in a blender and keep aside .
  • In a large bowl, pour in heavy cream and start beating using a hand mixer or a whisk.Beat until stiff peaks form. Do not over beat it.
  • To this, add in condensed milk , vanilla essence and beat again for few seconds.
  • To this mixture, add the pureed strawberry and mix well.Next,add the chopped strawberries and fold  in gently.
  • Transfer the prepared mixture to a freezer safe bowl and freeze  for 3-4 hours.Garnish with few strawberry slices and enjoy this yummy dessert..


Ingredients:


  1. Grated carrot - 2 cups
  2. Ghee - 2 tbsp + 1 tbsp
  3. Sugar - 1/2 cup
  4. Whole milk - 2 cups
  5. Cardamom powder - 1/2 tsp
  6. Raisins - 1 tbsp
  7. Chopped almonds/cashews - 1 tbsp
Preparation:
  • Heat 2 tbsp ghee in  a heavy bottomed or non stick pan.Fry the raisins and cashews/almonds.Set it aside.
  • Add in grated carrot to the same pan and fry for 4-5 minutes. To this, add milk and bring it to boil.Simmer it for 10 -15 minutes stirring in between.
  • Add in sugar and cardamom powder. Cook until the mixture becomes thick.
  • Add the remaining 1 tbsp ghee and mix well.Cook for few more minutes and switch off the flame.
  • To this cooked halwa, add the ghee fried raisins and cashews/almonds.Mix well.Serve hot or warm.


Ingredients:

For the crust:

  1. Graham crackers /Digestive biscuits - 1 cup, powdered
  2. Unsalted butter - 3 tbsp
  3. Salt - a pinch
  4. Sugar - 2 tbsp
For the filling:

  1. Cream cheese - 3 cups, at room temperature
  2. Egg - 3 nos
  3. Sour cream - 1 cup
  4. Sugar - 1.25 cups
  5. Lemon juice - 1 tsp
  6. Vanilla essence - 2 tsp
  7. All purpose flour - 1/4 cup
Preparation:

  • Preheat oven to 325 F.
  • Grease a 9 inch springform pan with  melted butter and set aside.
  • For preparing the crust, in a bowl, mix together graham cracker crumbs, melted butter, salt and sugar.Press this mixture firmly to the bottom of the prepared springform pan, until the crumbs becomes a nice even layer.
  • For the filling, Take the cream cheese in a large mixing bowl. Using a hand or electric mixer, beat it until creamy.
  • Add in sugar and beat again.Next, add the eggs one by one and beat for few minutes.
  • To this, add sour cream, lemon juice, vanilla essence, and all purpose flour.Mix again until smooth.Do not overbeat the mixture.
  • Pour the cheesecake filling into the pan carefully.The filling should be evenly distributed.
  • Place the pan on the oven's middle rack and bake for 1 hour and 15 minutes or until firm.
  • After the baking time, turn off the oven and leave the cheesecake in the oven for 2 hours .
  • Remove it from the oven after 2 hours and let it cool completely.Refrigerate for 8-9 hours before serving.Top the cheesecake with some graham cracker crumbs or garnish with some berries or fruits.This is completely optional.

Ingredients:

  1. All purpose flour/Maida - 1 cup
  2. Corn starch - 3 tbsp
  3. Butter - 1/2 cup
  4. Powdered sugar - 1/4 cup+1/4 cup for coating the cookies
  5. Powdered almond - 1/4 cup
  6. Vanilla essence - 1 tsp
  7. Salt - 1/4 tsp
Preparation:
  • Preheat oven to 350 F.
  • In a mixing bowl, add in butter along with powdered sugar and beat until creamy.
  • Next, add in vanilla essence and beat again.
  • To this, add all purpose flour, corn starch, salt and mix well.Stir in powdered almonds and combine  well to form a soft dough.
  • Make small balls out of the dough and place them on a lined baking sheet and bake for 15 - 18 minutes or until the edges become golden brown.
  • Remove from the oven and let them cool for some time.When the cookies are still warm, roll them in the powdered sugar and transfer to a wire rack.After cooling completely, roll them again in the powdered sugar.
  • Store in an airtight container.

Ingredients:

  1. Grated carrot - 1 cup
  2. Grated coconut - 1/2 cup
  3. Ghee - 1 tbsp
  4. Condensed milk - 1/2 cup
  5. Powdered almond - 1/4 cup
  6. Cardamom powder - 1/4 tsp
  7. Chopped pistachios, almonds - for garnishing
Preparation;
  • Heat a heavy bottomed or non stick pan.Add in grated carrot and coconut.Stir fry them on medium heat for 5 minutes.
  • Add in ghee and mix well.To this, add powdered almonds , cardamom powder and mix again.Cook this mixture for 2-3 minutes.
  • Next, add condensed milk and mix everything well.Switch off the flame and transfer this mixture to a lined tray.and press it firmly.Let it cool completely.Cut them into squares and garnish with chopped pistachios or almonds before serving.


Serves - 2

Ingredients:

  1. Sweetened mango pulp - 1/2 cup
  2. Chopped mango - 1/2 cup
  3. Chilled milk - 1 cup
  4. Sugar - 3 tbsp
  5. Basil seeds - 1 tbsp
  6. Falooda sev - 1 cup
  7. Tutti frutti - for garnishing
  8. Mango ice cream - 1 cup
Preparation:
  • Soak the basil seeds in enough water for 30 minutes.Strain excess water and set it aside.
  • Add sugar to chilled milk and mix well until dissolved.
  • Cook falooda sev according to the package instructions.
  • Take a serving glass, add in a layer of  cooked falooda sev. Add 1/4 cup mango pulp.
  • Pour 1/2 cup chilled milk over it.Next, over the chilled milk, add the soaked basil seeds.
  • On top of it, add 1/4 cup chopped mango pieces.Finally, add 1/2 cup mango ice cream and garnish with some tutti frutti.
  • Take another serving glass and repeat the same with the remaining ingredients.Serve immediately.

Ingredients:

  1. Ripe mango, pureed  - 1 cup
  2. Semolina/Rava- 3/4 cup
  3. Sugar - 1/2 cup
  4. Ghee - 3 tbsp
  5. Saffron strands - a pinch
  6. Cardamom powder - 1/4 tsp
  7. Cashews- for garnishing
  8. Salt - a pinch
  9. Water- 2 cups
Preparation:

  • Heat  2 tbsp ghee in a  heavy bottomed or non stick pan and add in cashew nuts.Fry them until golden brown.Transfer it to a bowl and set aside.
  • In the same pan.add semolina and roast it over low flame for 3-4 minutes.Transfer it to another bowl.
  • Add 2 cups of water to the  pan and bring it to boil.Add a pinch of salt.Add in mango puree, saffron strands, cardamom powder and sugar .Mix it well.
  • To this mixture, add the roasted semolina and stir well.Cook it over medium flame, stirring continuously until the mixture gets thick.Add in the remaining ghee and mix well again.
  •  Switch off the flame .Transfer to a serving plate and garnish with ghee fried cashews.


Ingredients:


  1. Deseeded dates - 1 cup
  2. Almond -1 cup
  3. Grated coconut - 1/2 cup
  4. Green cardamom - 5 nos
Preparation:
  • Heat a pan and add the dates.Cook for 2-3 minutes to make them soft.Transfer to a bowl and keep it aside.
  • In the same pan,  dry roast the almonds for 3-4 minutes on medium flame.Remove them from the pan and let it cool.
  • Next, to the pan,  add grated coconut and dry roast it until golden brown.Switch off the flame and transfer it to a bowl.Let it cool.
  • Add the softened dates, roasted almonds ,coconut and cardamom to a blender and blend them to a coarse mixture.Transfer this mixture to a bowl and shape them into small lemon sized ladoos.

Ingredients:

  1. Heavy cream - 2 cups
  2. Sweetened condensed milk - 1 can
  3. Vanilla essence - 1 tsp
  4. Chocolate chips - 2 cups
  5. Oil -  1/2 cup
Preparation:

  • In a mixing bowl, beat the heavy cream until stiff peaks form.Do not over beat.
  • Add in vanilla essence, condensed milk and mix well.
  • Pour the mixture into popsicle moulds. Cover and freeze for 2-3 hours.Insert popsicle sticks to the center and freeze again for 6-7 hours.
  • Melt chocolate chips in microwave.Add in oil and mix well.Transfer this to a glass.
  •  Demould the popsicles and dip them in the chocolate mixture.Place the dipped bars on a tray lined with parchment paper and serve.



Ingredients:


  1. Full fat milk - 5 cups
  2. Sweetened condensed milk - 1 can
  3. Sugar - 3 tbsp
  4. Cardamom  - 6, powdered
  5. Almond/Badam - 1/2 cup,
  6. Corn flour - 1 tbsp
  7. Saffron - a pinch
Preparation:
  • Heat a heavy bottomed vessel and add in milk along with 3 tbsps of sugar..Bring it to boil and reduce the flame to medium. Stir well in between and scrape the sides and bottom of the vessel in order to prevent burning.Keep boiling the milk for 25 - 30 minutes till it reduces to half of the original quantity.
  • Add in condensed milk and stir well.Keep heating on medium flame for another 10 - 15 minutes until it gets slightly thickened.
  • Take 1/4 cup of the boiling milk out of the vessel.Add corn flour to this and mix well without any lumps remaining.Pour this mixture back to the vessel and keep stirring.
  • The milk will get more thickened after adding the cornflour mixture.Add cardamom powder,ground almonds and saffron.Mix well and switch off the flame.
  • Let the mixture cool completely.After cooling, pour into moulds.If moulds are not available, you can pour them into small steel glasses.Cover and freeze for 8-9 hours.
  • For unmoulding,place  the mould or glass in lukewarm water for few seconds,Insert popsicle sticks,carefully remove  kulfi from moulds  and enjoy.


Ingredients:

  1. Mango pulp - 3 cups
  2. Sweetened condensed milk - 1 can or 1.5 cups
  3. Heavy cream - 1 cup
  4. Vanilla essence - 1/2 tsp
Preparation:
  • In a mixing bowl, mix together mango pulp and sweetened condensed milk.If the mango pulp is not too sweet, add some sugar in the pulp  to make it more sweet.
  • In another bowl, pour in heavy cream and start beating using a hand mixer or a whisk.Beat until stiff peaks form.Do not over beat it.Add this whipped cream to the pulp mixture and fold gently.Add vanilla essence and give a mix.
  • Transfer to a freezer safe bowl and freeze it for 7-8 hours.

Ingredients:

  1. Urad dal - 1 cup
  2. Orange food colour - as needed
  3. Sugar - 2 cups
  4. Water - 1 cup
  5. Cardamom powder - 1/2 tsp
  6. Lemon juice - 1/2 tsp(optional )
  7. Oil - for deep frying
Preparation:
  • Soak urad dal in enough water for 3 hours.Drain excess water and keep it aside.
  • For making sugar syrup, heat sugar and water in a vessel and bring it to boil.Keep stirring in between.When the syrup becomes thick , switch off the flame and add in lemon juice,  cardamom powder and orange food colour. The syrup should not be too  sticky .Pour the prepared syrup in a bowl and set aside.
  • Next, grind the soaked urad dal to a thick batter, adding 1-2 tbsp of water .Add in a pinch of orange food colour and mix well.
  • Transfer this batter to a plastic ziploc bag with a  hole at its tip.The hole should not be too large or small.Heat oil in a heavy bottomed pan.Once the oil is hot, reduce the flame to medium.  Press down the batter into hot oil in any circular pattern.
  • Fry both sides for 4-5 minutes or until crisp and transfer immediately to the prepared sugar syrup.Dip each of them in the syrup for 2-3 minutes and transfer to a plate.Serve after 10 minutes.

Ingredients:

  1. Grated carrot - 2 cups
  2. Grated coconut - 1 cup
  3. Condensed milk - 1 cup
  4. Cardamom powder - 1/4 tsp
  5. Raisins - 1 tbsp
  6. Butter/ghee - 1.5 tbsp
Preparation:

  • Heat a non stick pan and dry roast the grated coconut,stirring constantly until the flakes are firm,aromatic and dry.Set it aside.
  • In the same pan add butter/ ghee and fry the raisins for few seconds.Keep it aside.
  • Add in grated carrot to the remaining ghee and cook under medium flame for 4-5 minutes.To this, add 3/4th of the dry roasted coconut and mix well.Keep stirring for 2-3 minutes.Reserve 1/4 th of the coconut for rolling the ladoo .
  • Add condensed milk along with cardamom powder to the carrot coconut mixture and stir frequently until it gets thickened.After 1-2 minutes, the mixture will start getting sticky .
  • At this point, add in fried raisins and mix well.Switch off the flame and let it cool completely.
  • After cooling, take a small portion of the mixture and roll out into a small ball and roll it again in the dry roasted coconut.Repeat the same with the remaining mixture.Yummy carrot coconut ladoo is ready to serve.Refrigerate leftover ones.


 
Ingredients:

  1. Whole milk - 4 cups
  2. Sugar - 3/4 cup
  3. Lemon juice - 1 tsp
  4. Cardamom powder - 1/2 tsp
  5. Ghee - 1 tsp + for greasing hands
  6. Cashews - for garnishing
Preparation:
  • Heat a wide non stick pan and add ghee.Add the milk and let it boil.when it starts boiling, add in sugar and reduce the flame to medium.Stir in between.
  • When the quantity reduces to half, add lemon juice and keep on stirring.
  • At this point, the milk will start to curdle and gets more thickened. After 4-5 minutes, it will start leaving the sides of the pan .The whole water content will evaporate and the milk solid will remain in the pan.
  • Add in cardamom powder and mix well. Let it cool completely.After it gets cooled, grind it to form a smooth paste.Set it aside for 10 minutes.
  • After 10 minutes, we can shape them.For that, grease your hands with some ghee .So that the mixture will not be sticky.Make equal sized balls out of the mixture and press them using your hands.Garnish with cashews or any other nuts of your choice.Yummy milk peda is ready to serve .Refrigerate the leftover ones.




Ingredients:

  1. Bread - 8 slices
  2. Milk - 1/2 cup
  3. Sugar - 1/2 cup
  4. Water - 1/2 cup
  5. Cardamom powder - 1/4 tsp
Preparation:

  • Take sugar and water in a pan and bring it to boil.Reduce the flame and boil it stirring in between until it becomes thick.The syrup should not reach string consistency.Before reaching that point, remove from heat and add in cardamom powder and mix well.Set aside.
  • Take the bread slices and remove the crusts.Tear it into small pieces using  your fingers .Add milk little by little and knead it to form a smooth dough.While kneading do not apply so much pressure.Knead  gently.Shape the dough into small equal sized balls.
  • Heat oil enough for frying.Fry the prepared bread balls in medium to low flame until golden brown.While frying stir them in between .
  • Add the bread balls into the prepared sugar syrup.Keep it for atleast 2 hours before serving.Garnish with chopped nuts or saffron and serve.

Ingredients:

For cake:


  1. All purpose flour/Maida - 1.5 cups
  2. Unsweetened cocoa powder - 3 tbsp
  3. Sugar - 1 cup
  4. Baking soda - 3/4 tsp
  5. Baking powder - 1/2 tsp
  6. Water - 1 cup
  7. White vinegar - 1 tbsp
  8. Vegetable oil - 1/4 cup
  9. Vanilla essence - 1 tsp
  10. Salt - 1/4 tsp
For frosting:

  1. Heavy cream - 2 cups
  2. Vanilla essence - 1 tsp
  3. Confectioner's sugar - 1/4 cup
For filling and decorating:

  1. Chopped pitted cherries - 1/2 cup
  2. Whipped cream -1/2 cup
  3. Syrup that comes with the cherry or sugar syrup - 1/2 cup
  4. Grated milk chocolate - 1 cup
  5. Pitted whole cherries -8 nos
Preparation:


  • Preheat oven to 350 F.
  • In a bowl sieve together all purpose flour, baking powder, baking soda and salt.Set aside.
  • In another mixing bowl, mix together vegetable oil and sugar .Add in vanilla essence, vinegar and water.Mix it again.To this mixture, add in the sieved flour.Mix both the wet and dry ingredients using a whisk to form a batter without any lumps.
  • Transfer to a greased baking pan and bake for 30 minutes or until a skewer or knife inserted to the center comes out clean.




  • Let it cool completely.Meanwhile, prepare the frosting.In a bowl take the heavy cream and beat it until it begins to thicken.Add in confectioner's sugar along with vanilla essence and beat again until stiff peaks form.
  • Place  the cake in a serving plate and cut it horizontally in half using a long knife.Remove the upper half carefully and set aside.On the cake on the serving plate, pour some cherry syrup generously and top it with cream.Spread it evenly and add chopped cherries.



  • Place the other half on top of it and pour the remaining syrup. Cover it with  whipped cream frosting.Reserve some cream for decoration.Refrigerate the cake for at least two hours.



  • Decorate the cake with remaining whipped cream frosting and top it with some cherries.Sprinkle grated chocolate on top and sides generously.



  • Refrigerate until serving.Slice and enjoy this yummy black forest cake..



Ingredients:

  1. Wheat flour - 1 cup
  2. Sugar - 1/4 cup
  3. Cardamom - 4 nos
  4. Black sesame seeds - 1 tsp
  5. Vegetable oil - 1 tbsp
  6. Salt - 1/4 tsp
  7. Water - as needed
Preparation:
  • Preheat oven to 425 F.Powder sugar along with cardamom and set aside.
  • In a mixing bowl, mix together  wheat flour, powdered sugar, sesame seeds, salt and vegetable oil.Add in enough water to form a smooth and soft dough.
  • Divide it into two halves and set one aside .With a rolling pin, roll out the dough into a thin sheet.Using a pizza cutter or knife, cut the dough into equal sized diamonds.Repeat the same with the remaining dough.
  • Transfer the diamonds to a baking sheet and bake for 10 - 12 minutes or until golden brown.
  • Let them cool completely and store in an airtight container.Enjoy this healthy snack with a cup of tea.
