Vermicelli Upma
Ingredients:
- Vermicelli / Semiya - 1.5 cup
- Chopped carrot - 1/2 cup
- Chopped beans - 1/2 cup
- Green peas - 1/4 cup (fresh or frozen)
- Chopped ginger - 1/2 tsp
- Green chilli - 1
- Curry leaves - few
- Asafoetida / hing - a pinch
- Chopped onion - 1/2 cup
- Turmeric powder - 1/4 tsp
- Mustard seeds - 1/2 tsp
- Urad dal - 1 tsp
- Channa dal - 1tsp
- Peanuts - 1 tbsp
- Cashew - 1 tbsp
- Lemon juice - 1/2 tsp(optional)
- Water - 2 cups
- Salt - to taste
- Oil - as needed
- Coriander leaves - to garnish
Preparation:
- Heat a pan, dry roast the vermicelli till it turns golden brown.Set aside.
- In the same pan, heat oil and add mustard seeds. Let it splutter. Add urad dal, channa dal, peanuts and cashews.When it turns golden brown, add turmeric powder and hing.Mix well.Next add chopped ginger, chopped onion, chopped green chilli, curry leaves and saute for few minutes.
- When the onions turn translucent, add chopped vegetables and green peas .
- Add water , salt and bring it to boil.To this add roasted vermicelli and mix well.
- Cover and cook in low flame .Stir in between occasionally. Cook until water is absorbed.
- Finally, add in lemon juice and mix well.This part is optional.
- Switch off the flame.
- Garnish with chopped coriander leaves and serve.
