Chicken Fajitas

Ingredients:

  1. Boneless chicken - 250 gms
  2. Capsicum (green, red, yellow) - 1.5 cups
  3. Yellow onion - 1 nos
  4. Lemon juice - 2 tsp
  5. Pepper powder - 1 tsp
  6. Garlic powder - 1.5 tsp
  7. Chilli powder - 1/2 tsp
  8.  Finely chopped cilantro / coriander leaves - 1 tbsp
  9. Olive oil - 2 tbsp
  10. Salt - to taste
Preparation:

  • Wash well and clean the chicken .Cut it into thin strips.
  • Marinate the chicken pieces with lemon juice, pepper powder, chilli powder, garlic powder, cilantro, 1 tbsp olive oil and salt for 2 hours.
  • In a heavy  bottomed pan or skillet , heat the remaining olive oil and add in the chicken pieces.
  • Cook  over medium high heat  for 10 - 15 minutes without covering .Stir in between.
  • When the chicken is done, add in sliced onion and capsicum and saute for 5 - 6 minutes.
  • Taste check for salt. Add  more salt if needed. Sprinkle some pepper powder.
  • Mix well and switch off the flame.Serve with tortillas.
