Chicken Fajitas
Ingredients:
- Boneless chicken - 250 gms
- Capsicum (green, red, yellow) - 1.5 cups
- Yellow onion - 1 nos
- Lemon juice - 2 tsp
- Pepper powder - 1 tsp
- Garlic powder - 1.5 tsp
- Chilli powder - 1/2 tsp
- Finely chopped cilantro / coriander leaves - 1 tbsp
- Olive oil - 2 tbsp
- Salt - to taste
- Wash well and clean the chicken .Cut it into thin strips.
- Marinate the chicken pieces with lemon juice, pepper powder, chilli powder, garlic powder, cilantro, 1 tbsp olive oil and salt for 2 hours.
- In a heavy bottomed pan or skillet , heat the remaining olive oil and add in the chicken pieces.
- Cook over medium high heat for 10 - 15 minutes without covering .Stir in between.
- When the chicken is done, add in sliced onion and capsicum and saute for 5 - 6 minutes.
- Taste check for salt. Add more salt if needed. Sprinkle some pepper powder.
- Mix well and switch off the flame.Serve with tortillas.
