Vegetable Pulao
Ingredients:
- Basmati rice - 1.5 cup
- Chopped Vegetables - 1 cup(any vegetables of your choice)
- Onion - 1
- Ginger garlic paste - 1 tsp
- Garam masala - 1/2 tsp
- Ghee - 1 tbsp
- Bay leaf - 1
- Cardamom - 3
- Cinnamon stick - 1 inch piece
- Cloves - 2
- Salt - as needed
- Wash well and soak basmati rice in water for 30 minutes.
- Cook the rice adding enough water in a vessel along with all the whole spices mentioned above.
- Once the rice gets cooked, strain the excess water. Fluff the rice and let it cool .
- In a heavy bottomed pan, heat ghee .Add sliced onions and saute for few minutes till it gets golden brown.
- Now add the ginger garlic paste. Mix well and saute for few seconds.Add the garam masala powder.
- Add in the chopped vegetables.Add enough salt and cook for 5 - 6 minutes.To this add the cooked rice.Cover and cook for few more minutes.
- Open the lid and mix everything well and switch off the flame.
- Serve with raita or any gravy of your choice.
