Vegetable Pulao

Ingredients:

  1. Basmati rice - 1.5 cup
  2. Chopped Vegetables - 1 cup(any vegetables of your choice)
  3. Onion - 1
  4. Ginger garlic paste - 1 tsp
  5. Garam masala - 1/2 tsp
  6. Ghee - 1 tbsp
  7. Bay leaf - 1
  8. Cardamom - 3
  9. Cinnamon stick - 1 inch piece
  10. Cloves - 2
  11. Salt - as needed
Preparation:

  • Wash well and soak basmati rice in water for 30 minutes.
  • Cook the rice adding enough water in a vessel along with all the whole spices mentioned above.
  • Once the rice gets cooked, strain the excess water. Fluff the rice and let it cool .
  • In a heavy bottomed pan, heat ghee .Add sliced onions and saute for few minutes till it gets golden brown.
  • Now add the ginger garlic paste. Mix well and saute for few seconds.Add the garam masala powder.
  • Add in the chopped vegetables.Add enough  salt and cook for 5 - 6 minutes.To this add the cooked rice.Cover and cook for few more minutes.
  • Open the lid and mix everything well and switch off the flame.
  • Serve with raita or any gravy of your choice.
