Veggie Cheese Roll Ups

- Bread slice - 4 nos
- Cheese slice - 4 nos
- Chopped tomato - 2 tsp
- Chopped capsicum - 2 tsp
- Chopped onion - 2 tsp
- Grated carrot - 1 tsp
- Pepper powder - 1/2 tsp
- Red chilli flakes - 1/4 tsp
- Olive oil - 1/2 tsp
- Salt - to taste
- Butter - 2 tsp
Preparation:
- Take all the chopped veggies in a bowl and add pepper powder, chilli flakes, olive oil and salt; Mix together and set aside.
- Cut the crusts off of each piece of bread and flatten them using a rolling pin.
- Place a slice of cheese on top of each flattened bread and top it with 1 - 2 tsp of the veggie mixture.Roll it up tightly.
- Heat butter in a pan and cook all sides until the cheese is melted and the bread is toasted.
- Serve hot with tomato ketchup or any sauce of your choice.
