Kerala Jalebi
Ingredients:
- Urad dal - 1 cup
- Orange food colour - as needed
- Sugar - 2 cups
- Water - 1 cup
- Cardamom powder - 1/2 tsp
- Lemon juice - 1/2 tsp(optional )
- Oil - for deep frying
Preparation:
- Soak urad dal in enough water for 3 hours.Drain excess water and keep it aside.
- For making sugar syrup, heat sugar and water in a vessel and bring it to boil.Keep stirring in between.When the syrup becomes thick , switch off the flame and add in lemon juice, cardamom powder and orange food colour. The syrup should not be too sticky .Pour the prepared syrup in a bowl and set aside.
- Next, grind the soaked urad dal to a thick batter, adding 1-2 tbsp of water .Add in a pinch of orange food colour and mix well.
- Transfer this batter to a plastic ziploc bag with a hole at its tip.The hole should not be too large or small.Heat oil in a heavy bottomed pan.Once the oil is hot, reduce the flame to medium. Press down the batter into hot oil in any circular pattern.
- Fry both sides for 4-5 minutes or until crisp and transfer immediately to the prepared sugar syrup.Dip each of them in the syrup for 2-3 minutes and transfer to a plate.Serve after 10 minutes.
