Chicken Roll

Ingredients:

For stuffing :

  1. Cooked and shredded chicken - 2 cups
  2. Chopped onion - 1 cup
  3. Chopped ginger and garlic - 2 tsp
  4. Green chilli - 1 , chopped
  5. Red chilli powder - 1 tsp
  6. Turmeric powder - 1/2 tsp
  7. Coriander powder - 2 tsp
  8. Garam masala - 1 tsp
  9. Pepper powder - 1/2 tsp
  10. Lemon juice - 1/2 tsp
For pancake :
  1. Maida/ All purpose flour - 1.5 cups
  2. Sugar - 2 tbsp
  3. Salt - to taste
For coating:
  1. Egg whites - 2, beaten
  2. Bread crumbs -1 cup
Oil - for frying

Preparation:

Stuffing:
  • Heat oil in a pan. Add chopped ginger and garlic .Saute for a minute. 
  • Add chopped onion, chopped green chilli , enough salt and saute again till the onion becomes translucent.
  • Add in red chilli powder, turmeric powder, coriander powder and garam masala. Fry for few seconds.
  • To this add the shredded chicken along with pepper powder.  Stir for 2 -3 minutes in low flame.
  • Finally, add lemon juice and mix well. Switch off the flame.



Pancake for wrapping:
  • Mix maida, sugar and salt. Add enough water to form a batter of which is not too thick or thin.It should be similar to dosa batter.
  • Heat a tawa or non stick pan and pour a ladleful of batter on it and spread in circular motion and make thin dosas.
  • Place 1 or 2 tbsp of filling on the top portion of the dosa and fold all the sides.Seal the sides with some batter .
  • Dip each one in beaten egg white and roll in breadcrumbs.
  • Deep fry them in hot oil until golden brown.
  • Serve with tomato ketchup or any sauce of your choice.
