Mushroom Fry Kerala Style

Ingredients:

  1. Button mushroom, sliced - 2 cups
  2. Onion - 2 nos or 1 large 
  3. Ginger garlic paste - 2 tsp
  4. Green chilli - 1
  5. Kashmiri chilli pwder - 1 tsp
  6. Turmeric powder - 1/2 tsp
  7. Coriander powder - 2 tsp
  8. Garam masala - 1 tsp
  9. Curry leaves - 1 spring
  10. Coconut slices - 1/4 cup
  11. Water - 1/2 cup
  12. Salt - to taste
  13. Oil - as needed
Preparation:

  • Heat oil in a non stick or heavy bottomed pan.Add thinly sliced onion and saute for a minute.
  • Add ginger garlic paste , chopped green chilli and curry leaves. Mix well and saute till the onion becomes translucent.
  • Add in all the spice powders and fry for few seconds.
  • To this add sliced mushrooms and give a mix. Add half cup of water, cover and cook  in medium flame till the gravy becomes thick. 
  • Open the lid and cook  stirring in between till the mushrooms gets dry.
  • Add 1 tsp oil and roast for few more seconds.
  • Finally, add in coconut pieces fried in oil and give a mix.
  • Serve with rice.
