Egg Fried Rice
Ingredients:
- Cooked rice - 3 cups
- Egg - 2 nos
- Carrot - 1, chopped
- Onion - 1, finely chopped
- Chopped capsicum - 1/4 cup
- Fresh/frozen green peas - 1/4 cup
- Chopped spring/green onion - 2 tbsp
- Chopped garlic - 1 tsp
- Soy sauce - 2 tbsp
- Chilli sauce - 2 tsp
- Pepper powder - 1/2 tsp
- Vegetable oil - as needed
- Salt - as needed
- Cook rice to perfect consistency and let it cool for sometime.Do not overcook it.The rice grains should be separate.Beat eggs in a bowl and set aside.
- Heat oil in a pan . Add in chopped garlic and fry for few seconds.Next, add finely chopped onion and saute until translucent.
- Add chopped carrot,capsicum and green peas along with enough salt;Cook for 2-3 minutes.Add soy sauce , chilli sauce and mix well.To this, add beaten eggs and scramble them.
- Add in cooked rice and mix gently.Spread pepper powder and some salt over the rice and mix again gently.Cover and cook for 1 minute.Switch off the flame and garnish with chopped spring onions.Serve hot with any gravy of your choice.
