Uzhunnu vada/Medu vada
Ingredients:
- Whole urad dal - 1 cup + 1 tbsp
- Chopped onion - 2 tbsp
- Whole black peppercorns - 1 tsp
- Chopped ginger - 1 tsp
- Chopped green chilli - 1 tsp
- Chopped curry leaves - 1 tbsp
- Salt - as needed
- Oil - for deep frying
Preparation:
- Wash well and soak 1 cup urad dal in enough water for 4 hours.
- Drain excess water and grind it into a thick batter by adding 1-2 tsp water.The batter should be very thick .Do not add too much water while grinding.Set it aside.
- Heat a pan and dry roast 1 tbsp urad dal until golden brown.Switch off the flame and let it cool for sometime. Grind it into a fine powder.Add this to the batter along with chopped onion, peppercorns, chopped ginger, chopped green chilli , curry leaves and enough salt.Mix everything well.
- Heat oil enough for deep frying.Wet your hands with some water, and make a small ball out of the batter.With your thumb, make a hole in the middle.Drop this to the hot oil and fry under medium flame until golden brown and crispy.
- Serve hot with coconut chutney.
