Eggless Carrot Raisin Bread
Ingredients:
- Wheat flour - 1.5 cups
- Baking powder - 2 tsp
- Baking soda - 1/4 tsp
- Cinnamon powder - 1/4 tsp
- Salt - 1/4 tsp
- Vegetable oil - 1/4 cup
- Sugar - 3/4 cup
- Yogurt - 1 cup
- Vanilla essence - 1 tsp
- Grated carrot - 3/4 cup
- Raisins - 1/2 cup
Preparation:
- Preheat oven to 350 F.
- Sift together wheat flour baking powder, baking soda,cinnamon powder and salt.Keep it aside.
- In a large mixing bowl, mix together vegetable oil and sugar.Add in yogurt along with vanilla essence and mix well.To this, add the sieved flour mixture and fold in gently until combined.
- Next, add grated carrot and give a gentle mix.Dust raisins with some flour.Add it to the batter and fold again.
- Transfer the prepared batter to a greased baking pan and bake for 1 hour or until a skewer or knife inserted to the center of the bread comes out clean.Transfer to a cooling rack and let it cool completely.Slice and serve with tea/coffee.
