Crispy Dosa
Ingredients:
- Raw rice - 2 cups
- Urad dal - 3/4 cup
- Fenugreek seeds - 1/2 tsp
- Water - for soaking and grinding
- Cooked rice - 1/4 cup
- Salt - to taste
- Wash well and soak rice , urad dal and fenugreek seeds for about 5 hours.
- Grind them together with cooked rice to form a smooth batter.The batter should not be too thick or thin.
- Allow the batter to ferment for 10 - 12 hours, preferably overnight.
- Before making the dosa, add salt to the batter and mix well.
- Now, for making the dosa, heat a non stick pan or tawa on high flame.when the pan gets heated, reduce the flame.
- Grease the pan with oil and pour a ladleful of the batter on it and spread it in circular motion.
- If needed, drizzle some oil on top.
- Cook till the dosa turns golden brown and crispy.
- Serve immediately with coconut chutney/sambar .
