Crispy Dosa

Ingredients:

  1. Raw rice - 2 cups
  2. Urad dal - 3/4 cup
  3. Fenugreek seeds - 1/2 tsp
  4. Water  - for soaking and grinding
  5. Cooked rice - 1/4 cup
  6. Salt - to taste
Preparation:

  • Wash well and soak rice , urad dal and fenugreek seeds for about 5 hours.
  • Grind them together with cooked rice to form a smooth batter.The batter should not be too thick or thin.
  • Allow the batter to ferment for 10 - 12 hours, preferably overnight.
  • Before making the dosa, add salt to the batter and mix well.
  • Now, for making the dosa, heat a non stick pan or tawa on high flame.when the pan gets heated, reduce the flame.
  • Grease the pan with oil and pour a ladleful of the batter on it and spread it in circular motion.
  • If needed, drizzle some oil on top.
  • Cook till the dosa turns golden brown and crispy.
  • Serve immediately with coconut chutney/sambar .
