Cake Rusk/Tea Rusk
Ingredients:
- All purpose flour/Maida -1.25 cups
- Sugar -3/4 cup
- Eggs - 3 nos
- Oil - 1/2 cup
- Baking powder - 1/2 tsp
- Salt - 1/4 tsp
- Vanilla essence - 1/2 tsp
- Yellow food color - few drops/ a pinch
Preparation:
- Sift together maida and baking powder .
- In a large mixing bowl, take oil and sugar. Mix it well till the sugar get dissolved.
- Add in the eggs one by one and beat it well.
- Next add the vanilla essence and salt.
- Add the maida mixture as two or three batches and mix well.
- Transfer the batter to a well greased square cake pan.
- Preheat the oven to 350 F/180 C .
- Bake the cake for about 30 minutes or until it's done.Check by inserting a knife or tooth pick.if it comes out clean, then the cake is done.
- Transfer the cake to a cooling rack and let it cool.
- After it get cooled, cut the cake into 1 inch thick pieces.
- Transfer the slices to a lined cookie tray and bake them again in the same temperature(350 F ).
- Bake one side for 10 mins .Then turn every single pieces and bake for another 10 mins.
- Remove from heat and let it cool.
- Store in an airtight container.
