Kadala Parippu Pradhaman
Ingredients:
- Kadala parippu/chana dal - 1 cup
- Jaggery - 1 cup
- Thin coconut milk - 2 cups
- Semi thick coconut milk - 1 cup
- Thick coconut milk - 1/2 cup
- Coconut slices/thengakothu - 1/4 cup
- Cardamom powder - 1/2 tsp
- Cashews - 2 tbsp
- Ghee - 2 tbsp
- Wash the chana dal well and roast it for 5-6 minutes.
- Cook the roasted chana dal in a pressure cooker by adding enough water.
- After cooking, mash well till it becomes smooth.
- In a heavy bottomed pan, melt jaggery by adding 1/2 cup water.To this, add the mashed chana dal.Keep on stirring till it gets thickened.
- Add the thin coconut milk and let it boil.Simmer it on low flame for about 15 minutes.
- When it gets slightly thickened, add semi thick coconut milk and mix well.
- Cook on low heat till it gets thicker for about 10 minutes.
- Next, add the thick coconut milk and mix well.Do not boil.
- Keep stirring for few minutes and add cardamom powder. Switch off the flame.
- Garnish with coconut slices and cashews fried in ghee.
