Ingredients:
- Seedless watermelon, cubed - 3 cups
- Lemon - 1
- Sugar - 1 tbsp
- Ice cubes - as needed
Preparation:
- Place the watermelon cubes in a blender and blend until smooth.Strain the puree into a large bowl using a fine mesh strainer.
- Extract lemon juice from one large lemon and add to the watermelon juice .
- Add in sugar and mix well.Taste check for sweetness and add more sugar if needed.
- Pour the prepared watermelon lemonade into serving glasses and serve over ice.
Ingredients:
- Deseeded dates - 1 cup
- Almond -1 cup
- Grated coconut - 1/2 cup
- Green cardamom - 5 nos
Preparation:
- Heat a pan and add the dates.Cook for 2-3 minutes to make them soft.Transfer to a bowl and keep it aside.
- In the same pan, dry roast the almonds for 3-4 minutes on medium flame.Remove them from the pan and let it cool.
- Next, to the pan, add grated coconut and dry roast it until golden brown.Switch off the flame and transfer it to a bowl.Let it cool.
- Add the softened dates, roasted almonds ,coconut and cardamom to a blender and blend them to a coarse mixture.Transfer this mixture to a bowl and shape them into small lemon sized ladoos.
Ingredients:
- Chopped strawberry - 2 cups
- Chopped pineapple - 2 cups
- Sugar - 4 tbsp
- Lemon juice - 2 tsp
Preparation;
- Place chopped strawberries in a blender.Add in 2 tbsp sugar and 1 tsp lemon juice.Blend until smooth.Transfer the mixture to a bowl.
- Wash and clean the blender.Add in chopped pineapple along with the remaining sugar and lemon juice.Blend them until smooth.Pour this mixture to another bowl,
- Take popsicle mould . Fill its half portion with strawberry puree and the remaining portion with pineapple puree.Using a knife gently swirl the mixture to give a marble effect.Do not over mix.
- Cover and freeze for 7-8 hours.For demoulding, dip them in warm water for few seconds.Carefully remove popsicles from the mould and enjoy.
Ingredients:
- Chilled whole milk - 1.5 cups
- Instant coffee powder - 1.5 tsp
- Sugar - 3 tbsp
- Vanilla ice cream - 1/2 cup
- Chocolate syrup - for garnishing(optional)
Preparation:
- In blender add milk, coffee powder, sugar and ice cream.Blend until the mixture becomes smooth and frothy.
- Pour into a serving glass and top with a scoop of ice cream.Drizzle some chocolate syrup if needed.
- Serve immediately.
Ingredients:
- Heavy cream - 2 cups
- Sweetened condensed milk - 1 can
- Vanilla essence - 1 tsp
- Chocolate chips - 2 cups
- Oil - 1/2 cup
Preparation:
- In a mixing bowl, beat the heavy cream until stiff peaks form.Do not over beat.
- Add in vanilla essence, condensed milk and mix well.
- Pour the mixture into popsicle moulds. Cover and freeze for 2-3 hours.Insert popsicle sticks to the center and freeze again for 6-7 hours.
- Melt chocolate chips in microwave.Add in oil and mix well.Transfer this to a glass.
- Demould the popsicles and dip them in the chocolate mixture.Place the dipped bars on a tray lined with parchment paper and serve.
Ingredients:
For marination:
- Boneless chicken - 1/2 kg
- Ginger garlic paste - 1 tbsp
- Yogurt - 1/2 cup
- Red chilli powder - 1 tsp
- Turmeric powder - 1/2 tsp
- Pepper powder - 1/4 tsp
- Garam masala - 1/2 tsp
- Lemon juice - 1 tbsp
- Salt - as needed
Vegetables:
- Green capsicum - 1, cubed
- Red capsicum - 1, cubed
- Onion - 1, cubed
Preparation:
- Wash well and cut the chicken into cubes.In a large bowl, take all the ingredients listed under 'marination' and mix everything well.Keep it aside for 1 hour.
- Soak the wooden skewers in enough water for 30 minutes in order to prevent burning.
- Preheat oven to 450 F.After 1 hour of marination, add in chopped capsicum and onion to the marinated chicken and mix well.
- Take a skewer, thread the chicken pieces along with chopped veggies in between.Repeat the same with remaining chicken and veggies .Cover the exposed portion of the skewer with aluminium foil.Place the chicken skewers on a tray lined with aluminium foil and keep it in the oven .Flip it over after 20 minutes to cook the other side.After 15 minutes, set the oven to broil mode and broil them for 5-6 minutes.
- Remove from the oven and serve hot.

- Ripe mango,chopped - 2 cups
- Sugar - 1/4 cup
- Non fat plain yogurt - 1 cup
- Chilled milk - 3/4 cup
- Cardamom powder - 1/2 tsp
- Ice cubes - as needed
Preparation:
- Place the chopped mangoes in a blender.Add in sugar and blend until smooth.
- To this add yogurt, milk, cardamom powder and blend again.Taste check for sweetness and add more sugar if needed .If adding more sugar, blend it once again.
- Pour to serving glasses and add ice cubes if needed.Serve immediately.Also, you can chill it and serve .
