The Menu of Flavours

A mouth watering menu of your favourite flavours

Ingredients:

  1. Cooked rice - 4 cups
  2. Finely chopped onion - 1/2 cup
  3. Chopped capsicum - 1/4 cup
  4. Chopped tomato - 1/2 cup
  5. Green peas - 1/2 cup
  6. Ginger garlic paste - 1 tbsp
  7. Cumin seeds - 1/2 tsp
  8. Butter - 2 tbsp
  9. Red chilli powder - 1/2 tsp
  10. Turmeric powder - 1/4 tsp
  11. Pav bhaji masala - 2 tbsp
  12. Lemon juice - 1 tbsp
  13. Coriander leaves - 2 tbsp.chopped
  14. Salt - as needed
Preparation:
  • Cook rice to perfect consistency and let it cool completely .You can also use leftover rice.
  • Heat butter in a pan and add in cumin seeds.Let it splutter.Add finely chopped onion and saute for few minutes.
  • To this, add ginger garlic paste and saute until the onion turns soft.
  • Add in chopped capsicum ,tomato and green peas.Cook over high flame for 3-4 minutes.
  • Add turmeric powder, red chilli powder, pav bhaji masala and enough salt.Mix everything well.
  • To this, add cooked rice and mix well without breaking it.Cover and cook on medium flame for 2-3 minutes.Open the lid, add lemon juice along with coriander leaves, give a mix and switch off the flame.
  • Garnish with coriander leaves and serve hot with raita or any gravy of .your choice.

Ingredients:


  1. Full fat milk - 5 cups
  2. Sweetened condensed milk - 1 can
  3. Sugar - 3 tbsp
  4. Cardamom  - 6, powdered
  5. Almond/Badam - 1/2 cup,
  6. Corn flour - 1 tbsp
  7. Saffron - a pinch
Preparation:
  • Heat a heavy bottomed vessel and add in milk along with 3 tbsps of sugar..Bring it to boil and reduce the flame to medium. Stir well in between and scrape the sides and bottom of the vessel in order to prevent burning.Keep boiling the milk for 25 - 30 minutes till it reduces to half of the original quantity.
  • Add in condensed milk and stir well.Keep heating on medium flame for another 10 - 15 minutes until it gets slightly thickened.
  • Take 1/4 cup of the boiling milk out of the vessel.Add corn flour to this and mix well without any lumps remaining.Pour this mixture back to the vessel and keep stirring.
  • The milk will get more thickened after adding the cornflour mixture.Add cardamom powder,ground almonds and saffron.Mix well and switch off the flame.
  • Let the mixture cool completely.After cooling, pour into moulds.If moulds are not available, you can pour them into small steel glasses.Cover and freeze for 8-9 hours.
  • For unmoulding,place  the mould or glass in lukewarm water for few seconds,Insert popsicle sticks,carefully remove  kulfi from moulds  and enjoy.

Ingredients:

  1. Wheat flour - 1.5 cups
  2. Baking powder - 2 tsp
  3. Baking soda - 1/4 tsp
  4. Cinnamon powder - 1/4 tsp
  5. Salt - 1/4 tsp
  6. Vegetable oil - 1/4 cup
  7. Sugar - 3/4 cup
  8. Yogurt - 1 cup
  9. Vanilla essence - 1 tsp
  10. Grated carrot - 3/4 cup
  11. Raisins - 1/2 cup
Preparation:
  • Preheat oven to 350 F.
  • Sift together wheat flour baking powder, baking soda,cinnamon powder and salt.Keep it aside.
  • In a large mixing bowl, mix together vegetable oil and sugar.Add in yogurt along with vanilla essence and mix well.To this, add the sieved flour mixture and fold in gently until combined.
  • Next, add grated carrot and give a gentle mix.Dust raisins with some flour.Add it to the batter and fold again.
  • Transfer the prepared batter to a greased baking pan and bake for 1 hour or until a skewer or knife inserted to the center of the bread comes out clean.Transfer to a cooling rack and let it cool completely.Slice and serve with tea/coffee.

Ingredients:

  1. Tomato - 4 nos, chopped
  2. Onion  - 1 , chopped
  3. Chopped garlic - 1/2 tsp
  4. Channa dal/kadala parippu - 1 tbsp
  5. Urad dal/uzhunnu - 1 tsp
  6. Kashmiri red chilli powder - 1/2 tsp
  7. Asafoetida/hing/kayam - 2 pinches
  8. Mustard seeds - 1/2 tsp
  9. Dry red chillies - 1 or 2
  10. Curry leaves - 1 spring
  11. Salt - as needed
  12. Oil - as needed
Preparation:
  • Heat oil in a pan .Add channa dal and urad dal.Fry until golden brown.Add in chopped garlic and fry for few seconds.
  • Next, add chopped onion and saute until the onion becomes translucent and golden brown.To this, add chopped tomato and cook well.The tomatoes should turn mushy and soft.
  • Add in kashmiri red chilli powder along with two pinches of asafoetida and enough salt.Mix everything well and cook for 2-3 minutes.Switch off the flame and let it cool completely.
  • Transfer to a blender and blend until smooth.No need of adding water while grinding.If the mixture is too thick, you can add 1-2 tsps of water.
  • In another pan , heat some oil and splutter mustard seeds.Add broken red chilli along with curry leaves and fry for few seconds.Add chutney to the pan and mix everything well.Switch off the flame and serve with idli, dosa etc.

Ingredients:

  1. Whole urad dal - 1 cup  + 1 tbsp
  2. Chopped onion - 2 tbsp
  3. Whole black peppercorns - 1 tsp
  4. Chopped ginger - 1 tsp
  5. Chopped green chilli - 1 tsp
  6. Chopped curry leaves - 1 tbsp
  7. Salt - as needed
  8. Oil - for deep frying
Preparation:
  • Wash well and soak  1 cup urad dal in enough water for 4 hours.
  • Drain excess water and grind it into a thick batter by adding 1-2 tsp water.The batter should be very thick .Do not add too much water while grinding.Set it aside.
  • Heat a pan and dry roast 1 tbsp urad dal until golden brown.Switch off the flame and let it cool for sometime. Grind it into a fine powder.Add this to the batter along with chopped onion, peppercorns, chopped ginger, chopped green chilli , curry leaves and enough salt.Mix everything well.
  • Heat oil enough for deep frying.Wet your hands with some water, and make a small ball out of the batter.With your thumb, make a hole in the middle.Drop this to the hot oil and fry under medium flame until golden brown and crispy.
  • Serve hot with coconut chutney.

Ingredients:

  1. Fresh strawberry, hulled and chopped - 2 cups
  2. Plain yogurt - 1 cup
  3. Sugar - 1/4 cup
  4. Vanilla essence - 1/2 tsp
Preparation:
  • Add chopped strawberries, and sugar in a blender and blend until smooth.
  • Add in yogurt, vanilla essence and blend again.
  • Transfer this mixture to a freezer safe bowl .Cover and freeze for 6-7 hours.Take it out from the freezer, break into small pieces and blend it again till it becomes smooth.
  • Pour it back to the container and cover it.Freeze it for 7-8 hours or until completely set.
  • Scoop it out into a bowl and enjoy!!

Ingredients:

  1. Sliced banana - 3/4 cup
  2. Chilled whole milk- 1 cup
  3. Dates - 8 nos
  4. Honey - to taste
Preparation:
  • Soak dates in warm water for 10 minutes.Chop them into small pieces.
  • Place all the ingredients in a blender and blend until smooth.Chill for 30 minutes if needed.Pour into serving glasses and serve.
