The Menu of Flavours

A mouth watering menu of your favourite flavours

Ingredients:

  1. Bread - 6 slices
  2. Pizza sauce/Tomato ketchup - 3 tbsp
  3. Chopped onion  - 1/2 cup
  4. Chopped tomato - 1/2 cup
  5. Chopped capsicum - 1/4 cup
  6. Olive oil - 2 tsp
  7. Italian seasoning - 1/2 tsp
  8. Pepper powder - 1/4 tsp
  9. Garlic powder - 1/4 tsp(optional)
  10. Salt - a small pinch
  11. Grated mozzarella cheese - 1/2 cup
  12. Butter - 1 tbsp
Preparation:
  • Take chopped onion,tomato and capsicum in a bowl.Add olive oil, Italian seasoning,pepper powder, garlic powder and a pinch of salt.Mix everything well and keep it aside.
  • Take a slice of bread, spread a tbsp of pizza sauce or tomato ketchup.Place chopped veggie mixture on top of it and top it with grated cheese.Cover with another bread slice.Repeat the same with the remaining bread slices.
  • Heat a pan and melt some butter.Place the prepared sandwich on the pan and toast until golden brown and crispy.Carefully, turn upside down and toast until the cheese is melted.
  • Transfer to a plate.Cut into triangles and serve hot with any sauce of your choice.

Ingredients:

  1. Urad dal - 1 cup
  2. Orange food colour - as needed
  3. Sugar - 2 cups
  4. Water - 1 cup
  5. Cardamom powder - 1/2 tsp
  6. Lemon juice - 1/2 tsp(optional )
  7. Oil - for deep frying
Preparation:
  • Soak urad dal in enough water for 3 hours.Drain excess water and keep it aside.
  • For making sugar syrup, heat sugar and water in a vessel and bring it to boil.Keep stirring in between.When the syrup becomes thick , switch off the flame and add in lemon juice,  cardamom powder and orange food colour. The syrup should not be too  sticky .Pour the prepared syrup in a bowl and set aside.
  • Next, grind the soaked urad dal to a thick batter, adding 1-2 tbsp of water .Add in a pinch of orange food colour and mix well.
  • Transfer this batter to a plastic ziploc bag with a  hole at its tip.The hole should not be too large or small.Heat oil in a heavy bottomed pan.Once the oil is hot, reduce the flame to medium.  Press down the batter into hot oil in any circular pattern.
  • Fry both sides for 4-5 minutes or until crisp and transfer immediately to the prepared sugar syrup.Dip each of them in the syrup for 2-3 minutes and transfer to a plate.Serve after 10 minutes.

Ingredients:

  1. Whole wheat flour - 1 cup
  2. Ripe banana - 2 nos, pureed
  3. Milk - 1 cup
  4. Sugar - 1.5 tbsp
  5. Baking powder - 1.5 tsp
  6. Cinnamon powder - 1/4 tsp
  7. Vanilla essence - 1 tsp
  8. Salt - a pinch
  9. Butter - 1 tbsp+ for cooking
  10. Honey/Maple syrup - as needed
Preparation:
  • In a bowl, mix together wheat flour, sugar, baking powder, salt and cinnamon powder.Add  pureed banana ,melted butter, vanilla essence and milk to the flour mixture.Mix  until a thick batter is formed.Do not overmix.
  • Heat a non stick pan over medium flame.Melt some butter and pour a ladleful of batter onto the pan.Using the back of the ladle, spread batter into a round.Cook until some bubbles burst on top and using a spatula,turn and cook the other side until golden brown.Transfer to a plate.Repeat the same with the remaining batter.
  • Serve hot with honey or maple syrup and banana slices.

Ingredients:


For chicken patties:
  1. Boneless chicken -  1/2 kg
  2. Breadcrumbs - 1 cup
  3. Finely chopped onion - 1/2 cup
  4. Egg - 1 
  5. Pepper powder - 1.5 tsp
  6. Garlic powder - 1 tsp
  7. Salt - as needed
For burger:

  1. Burger bun - as needed
  2. Onion - 1, sliced
  3. Tomato - 1, sliced
  4. Chopped lettuce - 1/4 cup
  5. Cheese slice - as needed
  6. Tomato ketchup
  7. Mayonnaise 
Preparation:
  • Pressure cook chicken in enough water adding 1/2 tsp pepper powder and salt.
  • After cooling, shred the cooked chicken into small pieces .Add it in a food processor and pulse it 3-4 times .
  • In a mixing bowl, mix together chicken, breadcrumbs, chopped onions, egg,pepper powder, garlic powder and enough salt.
  • Make patties out of this mixture and place them on a lined baking tray.Bake for 20 minutes at 450 F.Instead of baking,you can shallow fry the patties .
  • For making burger, place some chopped lettuce  on a slice of bun and top it with sliced tomato and onion.Place patties on top of it.Add ketchup and mayonnaise.Top it with a cheese slice.Cover with another slice of bun and enjoy..



Ingredients:

  1. Yellow onion - 2, cut into 1/4 inch slices
  2. All purpose flour/maida - 1 cup
  3. Cornstarch - 2 tbsp
  4. Breadcrumbs - 1 cup
  5. Pepper powder - 1/2 tsp
  6. Garlic powder - 1/2 tsp
  7. Red chilli powder - 3/4 tsp
  8. Italian seasoning - 1/2 tsp
  9. Salt - as needed
  10. Water - as needed
Preparation:


  • Preheat oven to 450 F.
  • In a bowl, mix together all purpose flour, cornstarch, red chilli powder and salt.Add enough water to form a batter of semi thick consistency.
  • In another bowl, combine together breadcrumbs, pepper powder, garlic powder and Italian seasoning.
  • Dip each onion slice in the prepared batter and coat it with breadcrumbs.Place them on a lined baking tray in a single layer and bake for 15 to 20 minutes or until golden brown and crispy, turning upside down in between.
  • Serve hot with any dipping sauce of your choice.

Ingredients:

  1. Wheat flour - 1.5 cups
  2. Sugar - 1 cup
  3. Unsweetened cocoa powder - 3 tbsp
  4. Vegetable oil - 1/4 cup
  5. White vinegar - 1 tbsp
  6. Vanilla essence - 1 tsp
  7. Baking powder - 1/2 tsp
  8. Baking soda - 1/4 tsp
  9. Hot water - 1 cup
  10. Salt - 1/4 tsp
For chocolate frosting:
  1. Melted unsalted butter - 2 tbsp
  2. Unsweetened cocoa powder - 1.5 tbsp
  3. Icing sugar - 1/2 cup
  4. Vanilla essence - 1 tsp
  5. Milk - 2 tbsp or as needed
Preparation:

  • Preheat oven to 375 F.
  • In a mixing bowl, sieve together wheat flour, baking powder, baking soda , unsweetened cocoa powder and salt.Keep it aside.
  • In another bowl, mix together sugar and vegetable oil.To this, add vinegar and vanilla essence.Add hot water and mix well.
  • To this mixture, add the sieved flour and mix thoroughly without any lumps remaining.
  • Line a cup cake tray with paper cups and fill each cup about 2/3rd full with the batter.
  • Place it in the oven and bake for 25-30 minutes or until a skewer inserted to the cupcake comes out clean.
  • Remove from the oven and place on a wire rack to cool.While the cupcakes are cooling, make the frosting.Spread the chocolate frosting only after complete cooling.
  • For chocolate frosting, in a bowl, mix all the ingredients listed.Spread it evenly on the cupcake and enjoy!!

Ingredients:

  1. Quick cooking oats - 2 cups
  2. Water - 1.5  to 2 cups
  3. Chopped onion - 2 tbsp
  4. Chopped ginger - 1 tsp
  5. Green chilli - 1, chopped
  6. Mustard seeds - 1/2 tsp
  7. Urad dal - 1 tsp
  8. Turmeric powder - 1/4 tsp
  9. Lemon juice - 2 tsp
  10. Asafoetida - a pinch
  11. Roasted peanuts - 2 tbsp
  12. Curry leaves - 1 spring
  13. Salt - as needed
  14. Oil - as needed
Preparation:

  • Heat a non stick pan and dry roast oats for 2-3 minutes.Keep it aside.
  • In the same pan, heat oil and splutter mustard seeds.Add in urad dal and fry for few seconds.
  • Next, add chopped ginger along with onion, green chilli and curry leaves.Saute until the onion turns translucent.To this, add turmeric powder  and a pinch of asafoetida. Mix everything well.
  • Add the dry roasted oats along with water and enough salt.Cover the pan with its lid and cook on medium flame for 3-4 minutes or until done.Switch off the flame and  add lemon juice .Add in roasted peanuts and mix everything well.
  • Serve hot with pickle, papad or any gravy of your choice.
