The Menu of Flavours

A mouth watering menu of your favourite flavours

Ingredients:

  1. Channa dal/Kadala parippu - 1 cup
  2. All purpose flour / Maida - 1 cup
  3. Sugar - 1 cup
  4. Salt - a pinch
  5. Cardamom powder - 1/2 tsp
  6. Turmeric powder - 1/4 +1/4 tsp
  7. Sesame oil - 3 tbsp
  8. Rice flour - as needed
  9. Ghee - as needed
  10. Water - as needed


Preparation:

  • Cook channa dal in pressure cooker adding enough water.Drain excess water and mash it.To the mashed dal, add sugar along with cardamom powder and 1/4 tsp turmeric powder .Stir well and  cook in low flame until it becomes thick  .
  • In a mixing bowl, mix together maida, salt and the remaining 1/4 tsp turmeric powder.Add enough water and knead into a smooth dough.Spread sesame oil on top of  it and set aside for 1 hour.
  • Divide the dough into small equal parts.Take one and spread on your left hand using fingers.Make a lemon sized ball out of the prepared channa dal mixture and place it over the flattened dough .Cover the edges completely.
  •  Dust it with  rice flour and roll into a medium circle using a rolling pin.On a hot tawa, cook both sides adding enough gee .
  • Repeat the same process for the remaining dough.Tastes best  with payasam.



Ingredients:

For caramel syrup:

  1. Sugar - 3/4 cup
  2. Water - 3/4 cup
Other ingredients:

  1. All purpose flour/Maida - 1 cup
  2. Butter - 1/2 cup
  3. Egg - 2 nos
  4. Sugar - 1/2 cup
  5. Raisins - 1/2 cup
  6. Tutti frutti - 1/4 cup
  7. Cashews - 1/4 cup
  8. Baking powder - 1 tsp
  9. Cinnamon powder - 1/4 tsp
  10. Cloves powder - 1/4 tsp
  11. Dry ginger powder - 1/4 tsp
  12. Nutmeg powder - a pinch
  13. Vanilla essence - 1 tsp
  14. Salt - 1/4 tsp
  15. Orange/apple juice - for soaking dry fruits
Preparation:

  • Soak raisins,tutti frutti and cashews in apple/orange juice overnight.
  • For the caramel syrup, heat sugar in a heavy bottomed pan until it melts and changes color to brown.Do not stir in between .Carefully add 3/4 cup water and stir well.Heat for 3-4 minutes and switch off the flame.Let it cool completely.
  • Preheat oven to 375 F.
  • Sieve together flour, baking powder, salt and set aside.Add all the spice powders and mix well.
  • In a mixing bowl, beat together butter and sugar till creamy.Add in egg and beat till it becomes fluffy .Add the caramel syrup and mix well.
  • To this, add the sieved flour mixture in small quantities and fold gently.
  • Drain the soaked dry fruits and dust with some flour.Add it to the prepared batter and mix gently.
  • Transfer to a greased baking pan and bake for 50 - 55 minutes or until a skewer inserted to the center of the cake comes out clean.




Ingredients:

  1. Aval/Poha/Rice flakes - 2.5 cups
  2. Grated jaggery - 1 cup
  3. Water - 3/4 cup
  4. Grated coconut - 1 cup
  5. Ghee - 1 tbsp
  6. Black sesame seeds/ellu - 2 tsp
  7. Pottu kadala/chana dal/roasted gram - 2 tbsp
  8. Cardamom powder - 1/2 tsp
  9. Dry ginger powder/Chukku podi - 1/4 tsp
  10. Raisins - 2 tbsp
  11. Coconut bits/Thengakothu - 3 tbsp

Preparation:

  • Heat ghee in a pan and fry coconut bits, raisins, roasted gram and sesame seeds separately; set aside.
  • In a heavy bottomed pan, melt jaggery in 3/4 cup of water. Boil it,stirring in between under medium flame till it reaches one string consistency. (A drop of jaggery syrup should form a string between your thumb and index finger when touched and pulled apart.) 
  • Add in grated coconut and stir for 1-2 minutes.To this, add cardamom powder and dry ginger powder. Add  rice flakes and mix well.
  • Next, add ghee fried raisins. coconut bits, roasted gram and sesame seeds.Mix everything well.
  • Let it cool completely and store in an airtight container.





Ingredients:

For sev:

  1. Besan/Kadalamavu/Gram flour - 2 cups
  2. Red chilli powder - 1 tsp
  3. Turmeric powder - 1/4 tsp
  4. Hing/asafoetida/kayam - 2 pinch
  5. Salt - as needed
  6. Water - enough for making dough
For Boondi:

  1. Besan/Kadalamavu/Gram flour - 1 cup
  2. Red chilli powder - 1/2 tsp
  3. Turmeric powder - a pinch
  4. Hing - a pinch
  5. Salt - as needed
  6. Water - enough for making batter
Other ingredients:

  1. Peanuts - 1/2 cup(with skin)
  2. Crushed garlic - 4(with skin)
  3. Pottu kadala/split dalia - 1/4 cup
  4. Curry leaves - 1 spring
  5. Hing - a pinch
  6. Salt - as needed
  7. Red chilli powder- 1/4 tsp
  8. Oil - for deep frying
Preparation:

Sev:

  • In a mixing bowl, mix together gram flour, red chilli powder, turmeric powder, hing, and  salt.Add enough  water and knead into a smooth dough.
  • In a pan, heat oil enough for deep frying.Using an idiyappam mould /string hopper, press down the dough into the hot oil.Fry until it gets golden colour and drain to a paper towel.Let it cool completely.After cooling, crush it with hands and set aside.

Boondi:

  • In a mixing bowl, add all the ingredients listed under 'for boondi' except water, and mix well.Add enough water and form a batter similar to  dosa batter, which is not too thick or thin.
  • Place a slotted ladle on top of hot oil and pour a ladleful of batter over it.The batter will drop into the oil through the holes to form boondi.
  • Fry until it becomes golden colour and drain to a paper towel.
Mixture preparation:

  • Fry peanuts,crushed garlic,split dalia and curry leaves in hot oil separately;Set aside.
  • In a mixing bowl, add the prepared sev, boondi, peanuts, garlic,split dalia , curry leaves, red chilli powder, hing, enough salt and mix well.Store in an airtight container.






Ingredients:

  1. Bread - 6 slices
  2. Sliced button mushroom - 1.5 cups
  3. Sliced onion - 1 cup
  4. chopped garlic - 1 tsp
  5. Pepper powder - 1/2 tsp
  6. Soy sauce - 2 tsp
  7. Chilli sauce - 1 tsp
  8. Tomato sauce - 1 tsp
  9. Cheese - 3 slices
  10. Butter - 1.5 tbsp
  11. Salt - as needed
  12. Oil - as needed
Preparation:
  • Heat oil in a pan and add chopped garlic along with sliced onions.Saute until the onions turns translucent.
  • Add in sliced mushrooms and saute until it becomes golden brown and dry.
  • Next, add enough salt,pepper powder, soy sauce, chilli sauce and tomato sauce.Mix everything well.
  • Take a bread slice, spread some butter and top it with 2 tbsp of prepared mushroom mixture.Place a slice of cheese on top of it and cover with another bread slice.
  • Toast both sides till the cheese gets melted .Cut into triangles and serve hot with any sauce of your choice.



Ingredients:

  1. Apple - 2 nos
  2. Banana - 1
  3.  Non fat yogurt - 1/2 cup
  4. Honey - 1 tbsp
  5. Vanilla essence - 1/2 tsp
  6. Almond -10 nos
Preparation:

  • Peel and chop the apples and banana.Add to the blender
  • Add all the other listed ingredients and blend until smooth.
  • Serve chilled .Garnish with some pomegranate seeds and  chocolate powder if needed.



Ingredients:

  1. Ripe banana - 2 nos( 1 cup when mashed)
  2. Rolled or quick cooking oats - 1.5 cups
  3. Powdered roasted peanuts - 1/4 cup
  4. Raisins - 2 tbsp
  5. Light brown sugar - 2 tbsp
  6. Baking powder - 1/4 tsp
  7. Salt - 1/4 tsp
  8. Vanilla essence - 1/2 tsp
Preparation:
  • Preheat oven to 375 F.
  • In a mixing bowl, mix together mashed banana and brown sugar .Add all the other listed ingredients and mix well.
  • Transfer this mixture to a 8x8 inch square baking tray lined with aluminium foil and press it down tightly and evenly using a spoon.
  • Bake for 30 minutes until the edges turns golden brown.Remove from oven and let it cool completely. Cut into bars and serve.
