The Menu of Flavours

A mouth watering menu of your favourite flavours


Ingredients:

  1. Chickpeas/vella kadala - 1.5 cups
  2. Chopped onion - 1/2 cup
  3. Chopped garlic - 1 tsp
  4. Chopped ginger - 1 tsp
  5. Red chilli, chopped - 1 
  6. Chopped coriander leaves/cilantro - 2 tbsp
  7. Cumin seeds - 1 tsp
  8. Maida/all purpose flour - 2 tbsp
  9. Baking soda - 1/2 tsp
  10. Lemon juice - 1 tsp
  11. Salt - as needed
  12. Oil for frying


Preparation:

  • Wash well and soak chickpeas in enough water overnight or for 6-7 hours.
  • Drain  and grind it into a coarse mixture.
  • Add in all the ingredients from 2- 11 and mix well.
  • Make small patties out of it and deep fry in medium heat till it turns golden brown .Serve with hummus. 



Ingredients:

  1. Vanilla ice cream - 2 cups
  2. Chilled milk - 1 cup
  3. Chocolate drink mix - 1/4 cup
  4. Sugar - 1 tbsp

Preparation:

  • In a blender, blend together ice cream, milk ,chocolate drink mix and sugar until smooth.
  • Transfer to a serving glass .Sprinkle some chocolate powder on top and serve!!





Ingredients:

  1. Heavy whipping cream - 2 cups
  2. Sweetened condensed milk - 1 can
  3. Vanilla essence - 1 tsp
Preparation:

  • In a mixing bowl, whip the cream until stiff peaks form.Do not over beat.
  • Add in the vanilla essence and condened milk; beat again for 1 minute.
  • Transfer to a freezing bowl.Cover and freeze for 5 - 6 hours.




Ingredients:

  1. Boneless chicken thighs  - 1/2 kg
  2. Diced red capsicum - 1/2 cup
  3. Diced zucchini - 1/2 cup
  4. Diced yellow onion - 1/2 cup
  5. Chopped garlic - 1 tsp
  6. Dried red chilli - 4 nos
  7. Corn flour - 3 tbsp
  8. Soy sauce - 3 tbsp
  9. Chilli sauce - 1 tsp
  10. White vinegar - 2 tsp
  11. Pepper powder - 1 tsp
  12. Vegetable oil - as needed
  13. Dry roasted peanuts - 1/2 cup
  14. Salt - as needed
  15. Water - 2 tbsp
Preparation:

  • Wash well and cut the chicken thighs into small pieces. Add enough salt and rub the pieces with 2 tbsp corn flour.Deep fry the pieces in oil and set aside.
  • In a pan, heat oil.Add in dried red chilli and fry for few seconds. Next add chopped garlic and saute again till the raw smell is gone.
  •  Add diced onion and cook for 2 -3 minutes.Throw in diced red capsicum, zucchini and enough salt; stir fry for 4-5 minutes.To this, add soy sauce, vinegar. pepper powder and chilli sauce.Add remaining 1 tbsp corn flour dissolved in 2 tbsp of water. Mix well.
  • Add the fried chicken pieces and peanuts ; mix well again.
  • Taste check for salt. Sprinkle more salt if needed.
  • Serve with fried rice or plain rice.






Ingredients:

  1. All purpose flour / maida - 1.5 cup
  2. Wheat flour - 1/2 cup
  3. Brown sugar - 3/4 cup
  4. White sugar - 1/4 cup
  5. Baking powder - 1 tsp
  6. Baking soda - 1/2 tsp
  7. Vegetable oil - 1/4 cup
  8. Milk - 1 cup 
  9. Chopped pitted dates - 1/4 cup
  10. Black raisins - 1/2 cup
  11. Salt - 1/4 tsp


Preparation:

  • In a large bowl, sieve together all purpose flour, wheat flour, baking powder, baking soda, salt and set aside.
  • In another bowl, mix brown sugar and white sugar with oil.Add milk to this mixture and mix well.
  • To this, add in the dry ingredients and fold gently.
  • Finally, to the batter,  add chopped dates and raisins dusted with some flour .Mix again gently.
  • Transfer this mixture  into a greased loaf tin and bake for 45 minutes at 375 F. A knife or skewer inserted to the center should come out clean.
  • Let it cool in tin for 10 minutes, then turn out onto a cooling rack .





Ingredients:

  1. Bread slices - 5
  2. Fruit jam  - 2 tbsp( any jam of your choice )
  3. Milk - 1/2 cup
  4. Egg - 1 
  5. White sugar - 1.5 tbsp
  6. Brown sugar - 1 tbsp
  7. Vanilla essence - 1/2 tsp
  8. Butter - 1 tbsp
Preparation:

  • In a bowl, beat egg and 1/2 tbsp sugar.Add milk and vanilla essence and mix well; set  aside.
  • Combine remaining white sugar and brown sugar .Set aside.
  • Remove the crust from each bread piece and flatten it.
  • Spread jam evenly over the bread.
  • Roll up each slice and dip in egg milk mixture.
  • Heat butter in a pan and cook each rolls until golden brown. 
  • Roll them in the white - brown sugar mixture.Serve immediately.



Ingredients:

  1. Spaghetti - 250 gms
  2. Chopped garlic/ garlic powder - 1 tsp
  3. Olive oil - 2 tbsp
  4.  Sliced onion - 1 
  5. Chopped tomato - 1
  6. Capsicum - 1 , chopped lengthwise
  7. Carrot - 1, cut lengthwise
  8. Pepper powder - 1 tsp
  9. Chilli sauce - 1 tsp
  10. Salt - as needed


Preparation:

  • Cook spaghetti with enough salt in boiling water for 10 minutes or as per the instructions given in the packet. Drain water and set aside.
  • In a pan , heat olive oil . Add  sliced onion along with chopped garlic or garlic powder and saute for 2 minutes.
  • Add in chopped tomato and cook till it becomes soft.
  • Add sliced capsicum and carrot .Sprinkle enough salt and cook for 4-5 minutes.
  • When it gets cooked, add chilli sauce and pepper powder.
  • To this add the cooked spaghetti and mix well .
  • Switch off the flame and transfer to a serving bowl.
