The Menu of Flavours

A mouth watering menu of your favourite flavours

Ingredients:

  1. Cooked rice - 3 cups
  2. Egg - 2 nos
  3. Carrot - 1, chopped
  4. Onion - 1, finely chopped
  5. Chopped capsicum - 1/4 cup
  6. Fresh/frozen green peas - 1/4 cup
  7. Chopped spring/green onion - 2 tbsp
  8. Chopped garlic - 1 tsp
  9. Soy sauce - 2 tbsp
  10. Chilli sauce - 2 tsp
  11. Pepper powder - 1/2 tsp
  12. Vegetable oil - as needed
  13. Salt - as needed
Preparation:

  • Cook rice to perfect consistency and let it cool for sometime.Do not overcook  it.The rice grains should be separate.Beat eggs in a bowl and set aside.
  •  Heat oil in a pan . Add in chopped garlic and fry for few seconds.Next, add finely chopped onion and saute until  translucent.
  • Add chopped carrot,capsicum  and green peas along with enough salt;Cook for 2-3 minutes.Add soy sauce , chilli sauce and mix well.To this, add  beaten eggs and scramble them. 
  • Add in cooked rice and mix gently.Spread pepper powder and some salt over the rice and mix again gently.Cover and cook for 1 minute.Switch off the flame and garnish with chopped spring onions.Serve hot with any gravy of your choice.



Ingredients:

  1. Mozzarella string cheese - 6 nos
  2. Bread crumbs - 1/2 cup
  3. Garlic powder - 1/2 tsp
  4. Pepper powder - 1/2 tsp
  5. Italian seasoning - a pinch
  6. All purpose flour - 2 tbsp
  7. Salt - a pinch
  8. Water - as needed
  9. Chopped Coriander leaves/cilantro - for garnishing
Preparation

  • Preheat oven to 350 F.
  • Take all purpose flour and salt in a bowl . Add enough water to form a batter of semi thick consistency.Add garlic powder, pepper powder and Italian seasoning into the bread crumbs and mix well.
  • Cut mozzarella sticks into half.Dip each one in the prepared batter and coat it with bread crumbs.
  • Repeat with the remaining sticks and transfer them  to a baking sheet and bake for 7-8 minutes or until golden brown.Garnish with chopped coriander leaves and serve hot with any dipping sauce of your choice.
Note:- You can use beaten egg white as a binding agent instead of all purpose flour.




Ingredients:

  1. All purpose flour/Maida - 2.5 cups
  2. Active dry yeast - 2 tsp
  3. Warm Milk - 1 cup
  4. Sugar - 2 tbsp
  5. Salt - 1/4 tsp
  6. Melted Butter - 2 tbsp + for brushing on top
Preparation:

  • In a bowl combine together yeast and milk.Set aside for 10 minutes.
  • In a mixing bowl, mix together all purpose flour, 2 tbsp butter, sugar and salt.Add in milk -yeast mixture and knead gently to form a soft dough.Cover and let it rise  in a warm place until doubled, for 1 hour.
  • Punch down the dough and shape it into a loaf. Place it in a greased baking tray.Cover and keep it in a warm place for 30 minutes.It should get doubled in size.
  • Bake it for 25-30 minutes or until golden brown at 375 F .Remove from oven and brush melted butter on top.Let it cool for some time.Slice and serve.



Ingredients:

  3. Ginger garlic paste - 1 tsp
  4. Tomato - 4, chopped
  5. Chopped green chilli - 1 tsp
  6. Mustard seeds - 1 tsp
  7. Cumin seeds - 1/2 tsp
  8. Curry leaves - 1 spring
  9. Turmeric powder - 1/4 tsp
  10. Red chilli powder - 1/2 tsp
  11. Garam masala - 1 tsp
  12. Asafoetida - a pinch
  13. Vegetable oil - 1 tbsp
  14. Salt - as needed
Preparation:

  • Heat oil in a pan and add cumin seeds and mustard seeds.Let it splutter.Add in curry leaves and chopped green chillies.Fry for few seconds.
  • Next, add chopped onion along with ginger garlic paste and saute until the onion turns translucent.Add in enough salt.
  • Reduce heat and add turmeric powder, asafoetida,  red chilli powder and garam masala. Mix everything well.To this, add chopped tomato and cook for 4-5 minutes.Mash it well.
  • Finally, add in cooked rice along with enough salt  and mix gently without breaking the rice.Mix until the whole rice is coated evenly with the masala. Cover and cook under low flame for 1-2 minutes.Switch off the flame and serve with raita or any gravy of your choice.




Here is a snack using leftover idlis..

Ingredients:

  1. Idli - 5 nos
  2. Onion - 1, finely chopped
  3. Chopped capsicum - 1/4 cup
  4. Finely chopped ginger - 1 tsp
  5. Grated coconut - 1/4 cup
  6. Dried red chilli - 1 
  7. Mustard seeds - 1/2 tsp
  8. Urad dal - 1 tsp
  9. Chopped green chilli - 1 tsp
  10. Turmeric powder - 1/4 tsp
  11. Red chilli powder - 1/2 tsp
  12. Asafoetida/hing - a pinch
  13. Curry leaves - 1 spring
  14. Salt - as needed
  15. Oil - as needed
Preparation:

  • Cut idlis into cubes and set aside.In a pan, heat oil and add mustard seeds.Let it splutter . Add dried red chilli and urad dal.Fry  for few seconds.
  • Next add  chopped ginger and fry until the raw smell is gone.Add in chopped onion along with chopped green chilli, curry leaves, enough salt  and saute till the onion becomes translucent.
  • To this, add grated coconut and fry until it becomes golden brown in colour. Add in turmeric powder, red chilli powder and asafoetida.Fry for few seconds and throw in chopped capsicum.
  • Cook for 1-2 minutes.Finally, add cubed idli and mix well.Taste check for salt and add more if needed.Cover and cook in low flame for 2-3 minutes.Switch off the flame and serve hot.



Ingredients:

  1. All purpose flour/Maida - 1 cup
  2. Sugar - 1/2 cup
  3. Baking powder - 1/4 tsp
  4. Baking soda - 1/4 tsp
  5. Vanilla essence - 1 tsp
  6. Milk - 3 tbsp
  7. Vegetable oil - 3 tbsp
  8. Roasted Peanuts - 1/2 cup
  9. Salt - 1/4 tsp
Preparation:

  • Preheat oven to 375 F.Sieve together all purpose flour, baking soda, baking powder, salt and set aside.
  • In a mixing bowl, mix together vegetable oil and sugar.Add in vanilla essence , milk and mix well.To this, add in the sieved flour mixture Mix gently to form a smooth dough.Finally add in crushed peanuts and knead again.
  • Make small balls out of the prepared dough and flatten them using your hands .Transfer to a lined baking tray and bake for 15 minutes or until golden brown.
  • Transfer to a cooling rack and let it cool for 30 minutes.Store in an air tight container.



Ingredients:

  1. Bread - 4 slices
  2. Finely chopped garlic - 1 tsp
  3. Onion - 1, thinly sliced
  4. Capsicum - 1 , thinly sliced 
  5. Soy sauce - 2 tsp
  6. Tomato sauce - 1 tbsp
  7. Red chilli sauce - 1 tsp
  8. Salt - as needed
  9. Oil - as needed
  10. Chopped coriander leaves - for garnishing(optional)
Preparation:

  • Heat a pan and toast the bread slices until it becomes crispy.You can toast bread slices in the oven too.Cut them into small squares and set aside.
  • In the same pan heat oil and add finely chopped garlic.Fry for few seconds.Add in sliced onion and saute until it becomes translucent.
  • Add soy sauce, red chilli sauce and tomato ketchup.Mix everything well.Throw in sliced capsicum and cook for 1-2 minutes.Do not over cook it.Add enough salt and mix well.
  • Finally add the cubed bread slices and mix gently until it gets evenly coated with the sauce mixture.Taste check for salt and sprinkle more if needed.
  • Garnish with chopped coriander leaves.This is completely optional.Serve hot .
