The Menu of Flavours

A mouth watering menu of your favourite flavours

Ingredients:

For sev:

  1. Besan/Kadalamavu/Gram flour - 2 cups
  2. Red chilli powder - 1 tsp
  3. Turmeric powder - 1/4 tsp
  4. Hing/asafoetida/kayam - 2 pinch
  5. Salt - as needed
  6. Water - enough for making dough
For Boondi:

  1. Besan/Kadalamavu/Gram flour - 1 cup
  2. Red chilli powder - 1/2 tsp
  3. Turmeric powder - a pinch
  4. Hing - a pinch
  5. Salt - as needed
  6. Water - enough for making batter
Other ingredients:

  1. Peanuts - 1/2 cup(with skin)
  2. Crushed garlic - 4(with skin)
  3. Pottu kadala/split dalia - 1/4 cup
  4. Curry leaves - 1 spring
  5. Hing - a pinch
  6. Salt - as needed
  7. Red chilli powder- 1/4 tsp
  8. Oil - for deep frying
Preparation:

Sev:

  • In a mixing bowl, mix together gram flour, red chilli powder, turmeric powder, hing, and  salt.Add enough  water and knead into a smooth dough.
  • In a pan, heat oil enough for deep frying.Using an idiyappam mould /string hopper, press down the dough into the hot oil.Fry until it gets golden colour and drain to a paper towel.Let it cool completely.After cooling, crush it with hands and set aside.

Boondi:

  • In a mixing bowl, add all the ingredients listed under 'for boondi' except water, and mix well.Add enough water and form a batter similar to  dosa batter, which is not too thick or thin.
  • Place a slotted ladle on top of hot oil and pour a ladleful of batter over it.The batter will drop into the oil through the holes to form boondi.
  • Fry until it becomes golden colour and drain to a paper towel.
Mixture preparation:

  • Fry peanuts,crushed garlic,split dalia and curry leaves in hot oil separately;Set aside.
  • In a mixing bowl, add the prepared sev, boondi, peanuts, garlic,split dalia , curry leaves, red chilli powder, hing, enough salt and mix well.Store in an airtight container.






Ingredients:

  1. Bread - 6 slices
  2. Sliced button mushroom - 1.5 cups
  3. Sliced onion - 1 cup
  4. chopped garlic - 1 tsp
  5. Pepper powder - 1/2 tsp
  6. Soy sauce - 2 tsp
  7. Chilli sauce - 1 tsp
  8. Tomato sauce - 1 tsp
  9. Cheese - 3 slices
  10. Butter - 1.5 tbsp
  11. Salt - as needed
  12. Oil - as needed
Preparation:
  • Heat oil in a pan and add chopped garlic along with sliced onions.Saute until the onions turns translucent.
  • Add in sliced mushrooms and saute until it becomes golden brown and dry.
  • Next, add enough salt,pepper powder, soy sauce, chilli sauce and tomato sauce.Mix everything well.
  • Take a bread slice, spread some butter and top it with 2 tbsp of prepared mushroom mixture.Place a slice of cheese on top of it and cover with another bread slice.
  • Toast both sides till the cheese gets melted .Cut into triangles and serve hot with any sauce of your choice.



Ingredients:

  1. Apple - 2 nos
  2. Banana - 1
  3.  Non fat yogurt - 1/2 cup
  4. Honey - 1 tbsp
  5. Vanilla essence - 1/2 tsp
  6. Almond -10 nos
Preparation:

  • Peel and chop the apples and banana.Add to the blender
  • Add all the other listed ingredients and blend until smooth.
  • Serve chilled .Garnish with some pomegranate seeds and  chocolate powder if needed.



Ingredients:

  1. Ripe banana - 2 nos( 1 cup when mashed)
  2. Rolled or quick cooking oats - 1.5 cups
  3. Powdered roasted peanuts - 1/4 cup
  4. Raisins - 2 tbsp
  5. Light brown sugar - 2 tbsp
  6. Baking powder - 1/4 tsp
  7. Salt - 1/4 tsp
  8. Vanilla essence - 1/2 tsp
Preparation:
  • Preheat oven to 375 F.
  • In a mixing bowl, mix together mashed banana and brown sugar .Add all the other listed ingredients and mix well.
  • Transfer this mixture to a 8x8 inch square baking tray lined with aluminium foil and press it down tightly and evenly using a spoon.
  • Bake for 30 minutes until the edges turns golden brown.Remove from oven and let it cool completely. Cut into bars and serve.



Ingredients:

  1. Bread slice - 4 nos
  2. Oil -  2 -3 tbsp or as needed
For batter:
  1. Besan /gram flour - 3/4 cup
  2. Chopped onion - 2 tbsp
  3. Chopped tomato - 2 tbsp
  4. Chopped capsicum - 2 tbsp
  5. Grated carrot -  2 tbsp
  6. Chopped ginger - 1/2 tsp
  7. Chopped coriander leaves - 1 tbsp
  8. Chopped green chilli - 1 tsp
  9. Red chilli powder - 1/4 tsp
  10. Turmeric powder - a pinch
  11. Pepper powder - a pinch
  12. Hing - a pinch
  13. Salt - as needed
  14.  Water - as needed
Preparation:
  • In a mixing bowl, mix together all the ingredients listed under 'for batter' .Add enough water to form a batter of semi thick consistency.
  • Cut the bread slices into triangles and dip each one in the prepared batter.Spread the veggie mixture on top of the slices using a spoon.
  • Heat oil in a pan and cook the bread slices , 2 or 3 at a time .Fry both sides on medium flame until it turns  golden brown.
  • Remove from flame and serve hot with tomato sauce.






Ingredients:

  1. All purpose flour/Maida - 2 cups
  2. Sugar - 3/4 cup
  3. Butter - 1/2 cup(1 stick) at room temperature
  4. Egg - 1
  5. Baking powder - 1/2 tsp
  6. Vanilla essence - 1 tsp
  7. Salt - 1/4 tsp
Preparation:

  • Preheat oven to 375 F.
  • Sieve together all purpose flour/maida, baking powder and salt; set aside.
  • In a mixing bowl beat together butter and sugar until smooth .Add in egg and beat again.To this, add vanilla essence and mix well.
  • Next, add the sieved flour mixture and mix gently to form a smooth dough.
  • Wrap the dough with a plastic wrap and refrigerate for 1 hour.
  • Roll out the dough using a rolling pin on a lightly floured surface.
  • Using cookie cutters, cut into desired shapes. Place them on a baking sheet and bake for 10 - 11 minutes or until the edges of the  cookies turn golden brown.
  • Remove from the oven and let them cool completely.Store in an airtight container.



 Serves - 4 

Ingredients:

  1. Bread slice - 4 nos
  2. Cheese slice - 4 nos
  3. Chopped tomato - 2 tsp
  4. Chopped capsicum - 2 tsp
  5. Chopped onion - 2 tsp
  6. Grated carrot - 1 tsp
  7. Pepper powder - 1/2 tsp
  8. Red chilli flakes - 1/4 tsp
  9. Olive oil - 1/2 tsp
  10. Salt - to taste
  11. Butter - 2 tsp


Preparation:
  • Take all the chopped veggies in a bowl and add pepper powder, chilli flakes,  olive oil and salt; Mix together and set aside.
  • Cut the crusts off of each piece of bread and flatten them using a rolling pin.
  • Place a slice of cheese on top of each flattened bread and top it with 1 - 2 tsp of the veggie mixture.Roll it up tightly.
  • Heat butter in a pan and cook all sides until the cheese is melted and the bread is toasted.
  • Serve hot with tomato ketchup or any sauce of your choice.
